| Vinification | 24 hours of maceration on the skins, followed by spontaneous fermentation. Careful fermentation and maturation in wooden barrels, followed by unfiltered bottling. |
| Wood education | Maturation for 10 months in 228 liter (Taransaud) and 500 liter (Damy) barrels, of which 30% in new barrels. Damy barrels come from the Vosges and the Tronçais forest. Taransaud barrels are of the 'Pure T' type, developed to support and accentuate the character of dry white wines. |
