Grape varieties 81% Xarel-lo, 10% Pinot Nero and 9% Chardonnay
Vineyard Xarel-lo: Camp d'Aviació, 33 years old. Chardonnay: Sobre Camp de Pujols, 36 years old. Pinot Noir: El Corral Vell, 12 years old. All located at Finca Les Torres, just below 700 meters.
Harvest Manual
Vinification The Chardonnay and Xarel-lo fermented in stainless steel for sixteen days at 16°C and then aged for a further three months on the lees with daily bâtonnage. The Pinot Noir fermented in new wooden barrels for 20 days at a controlled temperature of 20°C. The wines are then blended, and the second fermentation in bottle follows, followed by 80 months of lees aging.
