Vinification	Careful selection of grapes upon arrival. Maceration and fermentation in steel at a controlled temperature with regular pumping over and pigéage. Malolactic fermentation follows in American and French oak barrels.
Wood education	18 months. After bottling, the wine ages further for 36 months in the bottle before being marketed.
