Domaine les Champs de l’Abbaye
Winemaker Alain Hasard was originally a wine merchant, sommelier and psychologist: “I entered the world of wine with a gastronomic background and started this adventure with my wife Isabelle, whom I met when we were both studying in Montpellier. In 1997, we started making wine on four hectares of passetoutgrains in the Couchois. Immediately biodynamic and with low yields because I think it is important to differentiate from generic wine. We later moved to Aluze. This estate is just the right size for us.” Fields of the Abbey
Their small estate is almost six hectares in size, founded in 1997 and is located in the beautiful village of Aluze, on the Côte Chalonnaise. A beautiful area to discover. On these ‘fields of the abbey’, Alain and Isabelle have been working organically since 1999. On the terroir of Rully, Mercurey and Côtes Chalonnaise, they produce honest and pure wines.
Wine is made in the vineyard
True to the principle that ‘wine is made in the vineyard’, Alain pays particular attention to the harvest. This takes more than fifteen days, a small, local team carefully picks and selects the perfectly ripe and healthy grapes. Alain: “We visit the vines more than once so that each bunch has the optimum ripeness. Fermentation takes place under the action of indigenous yeasts, without any additives. Freshness, minerality and intensity are always my goals. The result: wines with expression of the terroir and high finesse.”
