Harvest Manual
Vinification Average 20 years of maturation in very old barrels. The maturation, carried out in Jerez de la Frontera, initially takes place under a layer of yeast (flor) for a period of 8 years. This layer of yeast later disappears, exposing the wine to oxidation for another 12 years.
Wood education "Solera y criadera", Approximately 8 years of maturation under the flor and later another 12 years without flor in old oak barrels.
