Vineyard	Vom Stein' in Frauenkirchen, one of the most historic vineyards in this area. The soil is mainly gravelly with a medium amount of limestone and a high level of quartz.
Harvest	Manual, selective
Vinification	Fermentation on the skins at a controlled temperature for a period of 3 weeks. Subsequently, the grapes are gently pressed. The young wine is then transferred to small French oak barrels where malolactic fermentation takes place.
Wood education	18 months in small French oak barrels and a further month in large foudres.
