Vineyard Vineyards in Garanche. Very old vines grown on a soil composed of clay and limestone
Harvest Manual, with selection in the vineyard
Vinification Whole bunch fermentation with native yeasts. Carbonic maceration follows for 6 days in steel tanks. Subsequently we proceed with pressing and conservation in a "conquet" (underground stainless steel container) at a constant temperature of 14°C. Finally, refinement for a period of 4 months and filtration before bottling.
